Ingredients
2 pints strawberry ice cream
1 pkg Brookshire’s Fresh Baked Sugar Cookies
2 cups white chocolate chips
1/2 cup freeze-dried strawberries, crushed
Directions
  1. Using a serrated knife, slice through an ice cream carton to make 3 discs that are 1-inch thick. Repeat with second pint of ice cream. Remove ice cream from carton pieces. Place the discs on a parchment-lined baking sheet. Put in the freezer for 30 minutes.
  2.  Remove ice cream discs from the freezer. Place 6 of the cookies upside-down on the baking sheet. Top each cookie with a disc of ice cream. Top with another sugar cookie. Place in the freezer for at least 1 hour.
  3.  Melt the white chocolate in the microwave or a double-boiler. Dip the sandwiches halfway into the chocolate. Sprinkle the tops with freeze-dried strawberries. Place on a baking sheet, and put in the freezer for 10 minutes to harde
